Tiki Food Recipe: Tropical Grilled Mango with Spicy Rum Glaze and Vanilla Ice Cream

This is a great tropical dish to serve at a tiki party, or luau.

Excellent to cool of to on a hot summer day.



RECIPE: Tropical Grilled Mango with Spicy Rum Glaze and Vanilla Ice Cream.

SERVES: 4
PREP TIME: 15 min.
COOK TIME: 20 min.

INGREDIENTS:
• 4 Tbls. Unsalted Butter
• 2 Tbls. Pineapple Juice
• 1 1/2 Tbls. Honey
• 1/2 Tsp. Chili Powder
• 1/2 Tsp. Cayenne Pepper
• 2 Tbls. Dark Rum (meyers rum, captain morgan)
• 2 Fresh firm Mangos (Peeled & Pitted)
• 1 Pint Vanilla Ice Cream
• 1/2 Cup Coconut Flakes
• 1/4 Cup Almonds
• 4 Fresh Lime Slices


DIRECTIONS:
1. Heat honey, juice, peppers and butter in a saucepan.
2. Bring to a boil and reduce heat and simmer for 10 minutes.
3. Add Rum, stir and set aside to cool.
4. Brush mango slices with glaze and let sit.
5. Grill glazed mango slices on the grill for 3-5 minutes.
6. Place 4 mango slices in a bowl.
7. Add a scoop of ice cream.
8. Add coconuts and almonds.
9. Top with more mango.
10. Add a spoon full of leftover glaze.
11. Garnish with lime slices.

• 2 Fresh Oranges
• 1/2 stick of Butter

COOKING INSTRUCTIONS
1. Heat skillet to med heat.
2. Melt butter in skillet.
3. Add the juice of the 2 oranges to the butter.
4. Add shrimp to skillet.
5. Add salt and pepper to taste.
6. Cook until done, about 3-4 minutes per side.

Overview:
This is as close as we can come to the original
recipethat is enjoyed in the Cayman Islands.
The original recipe is made from a special
recipe of gold rum, that made by the Tortuga
Rum Company and is not for sale to the public.
If you have a chance you must try this cake.

The original recipe is a closely guarded family secret,
handed down from father to son.

NOTE:
It is important that you use nice good dark rum.

Tortuga Rum Cake Recipe:

CAKE:
• 3/4 cup dark rum (Tortuga Dark, Jamaican)
• 4 large eggs
• 1/4 cup water
• 1/2 cup oil
• 1 box yellow cake mix
• 1 cup chopped walnuts
• 1 pack instant vanilla pudding
• 1 cup finely chopped walnuts

Secret Special Sauce
• 1/4 cup dark rum
• 1/4 cup water
• 1 cup white sugar
• 1 stick pure butter


Directions For Rum Cakes:
1. Preheat the oven to 340 F.
2. Grease and flour a cake pan.
3. Sprinkle the nuts on the bottom of pan.
4. Blend cake mix, dry pudding mix, water, rum, oil and eggs for 2-3 min.
5. Pour into pan.
6. Bake in oven for 1 hr .
7. Make Secret sauce 5 minutes before cake is done.
8. Combine water rum, water sugar and butter in to a pan.
9. Heat over medium heat, stirring often until boil.
10. Boil for 2-3 minutes stirring often. Remove cake from the oven.
11. Stab cake in places with sharp knife and say ARRRRGG. (like a pirate)
12. Pour sauce over cake.
13. Let the cool in the for 30 minutes before removing from the pan.

Tiki & Luau Food: Tahitian Chicken Fafa Recipe.


Tiki Food: How to make Tahitian Chicken Fafa.
Complete Recipe and Instructions for a great Tahitian Chicken dish.

This dish is a Tahitian Classic.
It combines chicken, coconut milk and
spinach.




INGREDIENTS for Chicken Fafa

• 2 garlic cloves
• 1/4 Cup onions, sliced
• 6-8 oz fresh spinach (taro)
• salt
• 4 boneless skinless chicken breasts
• 2 1/2 tbsps butter, divided
• 1 T & 1 1/2 pepper

PREPARATION
1. Heat one Tlsp butter in a skillet add onions & saute until golden brown.
2. Set onions in a bowl aside and cover.
3. In the skillet melt the remaing 1 1/2 Tlsp butter & place the chicken in the skillet & brown evenly.
4. Add the onions & continue to cook this until the chicken is no longer pink, 15-20 mins
5. Then add the garlic & spinach, cover & let simmer for 5 more mins.
6. Before serving pour the coconut milk over the chicken & add salt & pepper to taste.
#7 Serve over hot cooked rice.

The cooking process can take up to several hours, but it is worth the wait, as the food comes out soft and tender, in many cases literally falling off the bone.

Fruits and vegetables are available easily throughout Tahiti. Some excellent fruits to enjoy here include mangoes, melons, pineapples, watermelons, grapefruits and bananas. Faraoa coco or coconut bread is a mouth-watering dessert worth tasting as is firifiri or donuts, which are shaped like the number eight. A yummy treat, firifiri is best had when dipped with coffee. Poe is perhaps the most famous dessert on the island and is a baked papaya dish wrapped in banana leaves.

Tahiti or French Polynesian food is known throughout the world because of its exotic fruits, fresh fish and vegetables which are prepared with a strong French influence underlying the Tahitian ingredients. 



Restaurants in French Polynesia are from a wide variety of backgrounds including and inevitably French and Tahitian, but also Chinese, Vietnamese, and Italian.  

The sauces served in these restaurants often features sauces which contain home grown vanilla beans.

However to taste the absolutely genuine Tahiti Food you need to find a way of sampling the Ahima'a otherwise known at Tahiti's underground oven. It is usually prepared on a Sunday morning, or for a special celebration. Firstly the oven is preheated with a wood fire, then the wood is placed in levels one on top of the other all criss-crossed. The porous volcanic rock is scattered over the wood until it is completely covered.. When the fire goes out, the rocks are leveled and the food placed on top wrapped in woven baskets of coconut leaves. Fish, pork, chicken and vegetables are prepared in this way. Banana leaves are then laid over the top, plus many layers of leaves from the purao tree to cover the ahima'a completely. Finally earth is shoveled on top so no heat can escape and the food is grilled, braised and steamed for 3-4 hours. 



The Polynesian food is spread out on a table cloth of palm fronds or banana leaves. You will eat with your fingers off traditional wood plates, dipping juicy pieces of roast pork, fish, breadfruit, taro, and other goodies in coconut cream sauce.  

The celebrations are normally concluded with Polynesian dancing. Other things to look out for are as follows:

Poisson cru (ia ota) which is the national dish of Tahiti and Her Islands. This quite divine snack consists of raw fish and diced vegetables marinated with lime juice and soaked in coconut milk.  


Chevrettes are another popular Tahitian dish, and they are tasty freshwater shrimp.



No amura'a (meal) is complete without a rich dessert inspired by the islands. The ultimate Tahitian dessert is Poe, a sweet pudding made of taro root flavored with banana, vanilla, papaya or pumpkin and topped with a rich coconut-milk sauce.  

Stop by the roulettes or rolling restaurants, are colourful, electrically lit vans that offer the best inexpensive dining in Papeete. Both locals and visitors can dine on a variety of dishes from roast pork and pizzas to chow mein and flaming crêpes.

Aloha Chicken Recipe: SERVES (4)

Ingredients:
• 2 Chicken Breasts (cut in half)
• 1/3 Cup Pineapple Juice
• 1 Cup Crushed Pineapple
• 1/4 Cup Lemon Juice
• 1/4 Cup Chopped Onions
• 3 Tlsp Butter
• 2 Tlsp Soy Sauce
• 1 Tsp Cornstarch
• 1 Tsp Grated lemon Peel
• 1 Tlsp Thyme
• 1 Can Peaches (Halves)

DIRECTIONS:
1. Brown chicken 2 tlps butter.
2. Place in a microwave-safe dish.
3. Microwave on high for 5 minutes.
4. In a bowl, combine cornstarch and pineapple juice.
5. Stir in the lemon juice, lemon peel, soy sauce and thyme.
6. In skillet, saute onion in butter.
7. Stir juice mixture into skillet cook for 2 minutes,
8. Place peaches and pineapple over chicken.
9. Cover with the sauce.
10. Microwave for about 1 minute.

Are you a smoothie lover? Looking for some new smoothie recipes that use strawberries? If so, I would like to share 7 of my favorite strawberry smoothie recipes with you.

Let's take a look at why strawberries are good for you. Strawberries are high in Vitamin C and a great source of dietary fiber. Strawberries may help to prevent heart attacks, strokes, cancer and Alzheimer's disease.

All of these smoothie recipes use strawberries, along with some additional ingredients. If you are looking to cut calories, you can substitute the milk with skim milk, or the ice cream with low-fat yogurt.

If you like your smoothies really sweet, try adding 1-2 tablespoons of honey to your recipe. I always serve my smoothies in a chilled glass, but you can serve them any way that you like. You can drink them straight from the glass, use a straw or eat them with a spoon. It is best to always serve your smoothies immediately.

Strawberry Mango

1 c. fresh or frozen strawberries, sliced
1/2 c. mango, cubed
1/4 c. orange juice
6 ice cubes
1 tsp. honey, optional

Place all ingredients into a blender and blend well. Makes 12 ounces.

Lemon Strawberry

1 whole lemon peeled and de-seeded
4 lg. fresh strawberries, sliced
1 tbsp. plus 1 tsp. sugar
1/8 c. water
8 ice cubes

Place all ingredients into a blender and blend well. Makes 12 ounces.

Strawberry Frost

1 (14 oz.) can sweetened condensed milk
1 (8 ounce) container plain yogurt
6 oz. frozen strawberry juice concentrate
2-3 c. ice cubes

In blender container, combine sweetened condensed milk, yogurt and juice concentrate. Cover and blend until smooth. With blender running add in ice cubes, blending until smooth. Makes 4 servings.

Lemon Strawberry Crush

1 1/2 c. low-fat milk
1 1/2 tsp. lemonade-flavor soft drink mix
1 (8 ounce) vanilla low-fat yogurt
1 c. frozen strawberries
1 cup of ice cubes

Mix all of the above ingredients in a blender and blend on high speed until smooth. Makes 4 one-cup serving.

Double Strawberry

1/2 c. fresh strawberries
1/2 c. strawberry milk
1 c. vanilla yogurt
3/4 c. milk
whipped topping

Combine all ingredients except whipped topping in a blender. Blend until smooth. Pour into large glasses and top with whipped topping. Makes 2 servings.

Strawberry Chocolate

1/2 c. chocolate frozen yogurt
3/4 c. strawberry yogurt
1/2 c. frozen strawberries, sliced
1 tsp. sugar (optional)
ice cubes

Place ingredients in a blender and process until smooth. Makes 1 large serving.

Strawberry Sherbet

2 pts. strawberry sherbet, softened
1 1/2 c. cold milk
2 c. frozen strawberries, thawed
2 tsp. honey, optional

In blender combine all ingredients. Blend until smooth. Makes 6 servings.

You can make these smoothie recipes for breakfast, or as a healthy snack. I hope you find these recipes just as delicious as I do.

of our late night tiki parties and it was a big hit.

Like tiki drinks, the peanut chicken satay
has a big bold flavor.



PEANUT SAUCE MARINADE: Recipe One
• 1-2 Garlic Cloves Chopped & Minced
• 2-3 Tbls Peanut Butter
• 1 Tsp Curry Powder
• 1/2 Cup Fresh Lime Juice
• 1/2 Cup Brown Sugar
• 1 Tsp Black Pepper


PEANUT SAUCE MARINADE: Recipe Two

  • 1/4 cup peanut butter
  • 1/4 cup water
  • 1/4 cup soy sauce
  • 2 tbsp lime juice
  • 2 cloves garlic, minced and crushed
  • 2 tbsp rice vinegar
