Mango and Coconut Smoothie. A great tropical fruit smoothie for tiki party or luau.

Tiki Foods: How to make a Mango and Coconut Smoothie. 
This is another excellent tropical fruit smoothie for a summer tiki party or luau.
OVERVIEW
Healthy and tastes great.
A great way to cool off this summer.
The mango and coconut balance each other
well in this tropical fruit smoothie.

A great drink at the tiki bar for people who 
don't drink alcohol, or who are underage.
We also drink this tropical smoothie in the 
mornings at our tiki bar.
A great way to start the day.

INGREDIENTS
• 2 Cups Coconut Milk
• 2 Ripe Mangos
• 1 Tsp White Sugar
• 5 Cracked Ice Cubes
• Garnish with coconut flakes.

INSTRUCTIONS
1. Cut skin off mangos, pit and chop into chunks.
2. Place all ingredients for the smoothie into blender.
3. Blend until creamy.
4. Garnish with coconut fakes.
5. Drink right away!

Tropical Soup Recipe: Tropical Coconut Black Bean Soup. For Tiki Party or Luau.

Tiki Foods and Luau Party Foods: Coconut Black Bean Soup Recipe


A fast and yummy soup with the spirit of the tropics. 


INGREDIENTS:

  • 1 Can Mexican black beans (spiced)
  • 1 Can Coconut milk
  • 1 pack Frozen green peas
  • 2 cups Chicken stock (water will work)
  • 1 tlsp Fresh lime juice
In a saucepan, combine the black beans, coconut milk, peas and stock.
Bring to a boil, then simmer on low heat for 12 minutes. 
Put in a blender and blend until smooth. 
Return to the pan and stir in the lime juice.

A Great Caribbean Dish: Mango Sauce and Shrimp Recipe.
Tropical, tiki and luau food article.
This is a great shrimp dish with a tropical flair of fresh mangos.

SERVES: 4 people

Mango Shrimp Sauce Recipe:
Ingredients:
3/4 teaspoon of salt
4 teaspoon of canola oil
1/4 teaspoon of allspice
1/8 teaspoon of cinnamon
1/3 cup of cider vinegar
2 cloves of garlic, minced
1 tablespoon of brown sugar
1/2 cup of chopped red onion
1/4 teaspoon of ground cumin
1/4 teaspoon of garlic powder
2 tablespoon of fresh lime juice
1/4 teaspoon of red pepper flakes
1 tbsp fresh ginger, peeled and minced
1 pound of large shrimp, peeled, tails on
1 mango, peeled, pitted and the cut into
-1/2 inch pieces

Directions:
Heat small amount of oil in a saucepan
over medium-high heat. Cook the onion, garlic,
ginger, salt, allspice, cumin
and cinnamon 2-3 minutes.

Add the mango, vinegar, lime juice and sugar
and gently boil, stirring occasionally, till
the sauce is thick, refrigerate in a bowl.

Toss the shrimp along with red pepper, garlic
powder and the remaining 1/2 teaspoon of salt.

Next heat the remaining 2 teaspoons of oil in
a large size nonstick skillet over the medium
high heat.

Finally, cook the shrimp until it’s no longer
translucent, at least 2 minutes on each side.
Let cool; serve with sauce.

Mango Bread Recipe:
INGREDIENTS
• 2 Mangos (Chopped and ripe)
• 2 Cups White Flour
• 1 Tsp. Sea Salt
• 1 Tsp. Cinnamon
• Hand full of Raisins
• 3 Eggs
• 1/2 Cup vegetable Oil
• 1/4 Cup Butter

INSTRUCTIONS
1. Mix all ingredients in a large bowl
2. Place mix a into greased baking pan. 
3. Bake at 340 degress for 45-50 min. 
4. Let sit for 30 minutes.

Charred Red Bell Pepper, Garlic and Onion Salsa Recipe. A great smokey salsa for a summer party.

Red Bell Pepper, Garlic and Onion Salsa.  
A great smokey salsa for a summer tiki party or luau party.

This is another one of our favorite foods to
serve at our tiki parties. It is also very fun and easy to make.
We char the vegetables in our mexican fireplace outside.
This salsa recipe has a very wonderful smokey taste.

INGREDIENTS FOR SALSA SAUCE.
• 2 Red Bell Peppers
• 1 or 1/2 Onion
• 1 Garlic cloves
• Salt / pepper
• Lime
• OPTIONAL 1 Red Tomato

once again. a close up on the grilled eggplant & red pepper

PREPARATION
1. Heat up fire pit or grill, until coals are hot.
2. Place vegetables right on the hot coals.
3. Rotate vegetables every few minutes.
4. They will get soft and charred.
5. Once done, remove from coals.
6. Place in a bowl and cover, this lets them stem cook a bit.
7. NOTE: Do not remove the black char, this adds the smokey taste.
8. Place all ingredients in a blender and blend until creamy.
9. Add salt, pepper, lime to taste.
10. Place in a serving bowl.

TROPICAL BANANA PANCAKES RECIPE. Great way to start the day after a tiki party or luau.


TROPICAL BANANA PANCAKES RECIPE

Go bananas with this great pancake recipe.
A great way to start the day after a tiki party 
or luau and it's good for you.



RECIPES

QUICK BANANA PANCAKES
This recipe uses instant pancake mix.

Serves: 4-6

INGREDIENTS
• 2 Ripe Bananas
• 1 Yellow Banana
• Instant Pancake Mix
• Milk
• Syrup or Honey

PREPARATION
Cut the 2 ripe bananas into 1/4 inch cubes.
Cut the yellow banana into round slices.
Make the instant pancake mix, follow box directions.
Add the cut up ripe bananas and mix well.
Preheat pan to medium heat.
Make whatever size pancakes you like.
Add sliced banana at the end on top of pancakes.
Add syrup or honey.
ENJOY!

Recipe for Chicken Luau.

SERVES: 6-8

INGREDIENTS



  •  2 pounds boneless chicken breasts



  •  2 tablespoons peanut oil


  •  2 teaspoons minced or finely chopped garlic


  •  4 cups chicken stock or broth


  •  3 cups whole leaf spinach



  •  1 1/2 cups coconut milk 



  • PREPARATION 
    Cut chicken into 1 inch cubes.  Heat pan with oil and
    start to cook chicken and garlic on low heat. Cook
    until it starts to turn brown.  Combine chicken broth
    with chicken and cover. Cook on medium for 8-10 minutes.
    Mix in spinach and coconut milk. Simmer another 5 minutes.

    TROPICAL CUCUMBER SALAD RECIPE. Great for Summer tiki party or luau.

    TIKI PARTY FOODS: TROPICAL CUCUMBER SALAD RECIPE.


    This is a Great dish for Summer tiki party or luau to cool off to.
    All we have to say is yum!
    A nice cool light side for a hot summer gathering.
    Quick, simple and inexpensive.
    Everybody loves cucumber salad.

    RECIPE For CUCUMBER SALAD. (serves two)

    • One peeled Cucumber, thinly sliced

    • 1/4 Cup Mayo

    • 1/4 Cup Ranch Dressing

    • 1/4 Cup Milk

    • 1 Tsp. Sugar

    • Pinch of Salt and Pepper

    OPTIONAL Chopped Onions


    Procedure:
    1. Cut and then peel cucumber. Slice the cucumber into thin slices.
    2. Mix all ingredients. Put in the frig for 1 hour. Enjoy!

    A classic tropical dish. Great as a side or desert
    at a tiki party, summer party or luau.

    OVERVIEW
    Pineapple and Rice are at the core of this dish.
    I have been eating heavenly rice for years,
    My grandmother would make this at all our
    summer family get togethers.
    and it is one of my favorite sides to serve at parties.
    Simply addicting, we can't get enough of this stuff.

    RECIPES

    RECIPE ONE: QUICK AND EASY
    • 1 Can Crushed Pineapple
    • 1-4 Cups Instant Rice (3-4 for a large bowl)
    • 1 Pack Vanilla Pudding
    • 1-2 Cups Milk

    DIRECTIONS TO MAKE
    1. Cook instant rice as normal.
    2. Then place rice in a saucepan with a some pineapple juice and simmer 1-2 minutes.
    3. Make the pudding mix with the milk.
    4. Mix all ingredients.
    5. Let chill before serving.



    RECIPE TWO: CLASSIC HEAVENLY RICE
    • 1 Can Crushed Pineapple

    • 1 Cup Mini Marshmallows
    • 1 Cup Chopped Pecans or Almonds

    3. Make the pudding mix with the milk.
    4. Mix all ingredients.
    5. Let chill before serving.

    Great healthy tropical dish for tiki party or as a luau party food.

    OVERVIEW
    This is one of our absolute favorite tropical fruit recipes. It's really healthy and quick to make. Perfect as a side for any summer get together, tiki party or luau.

    INGREDIENTS
    • 1 Can Mandarin Oranges
    • 1 Can Peaches Cut
    • 1 Can Pineapple Chunks
    • 1 Bunch of Seedless Grapes
    • 3-4 Kiwi Fruit Sliced
    • 1 Apple Cut into Small Chunks and seeded.
    • 1 Cantaloupe cut into small chunks or balled with baller.
    • 1 Box of Strawberries Cut into Slices.
    • 1/2 cup of Honey.

    PREPARATION
    1. Cut fruit into chunks and remove 75% of the juice. Set aside and drink.
    2. Place all fruit into a large bowl.
    3. Pour warm honey over the fruit.
    4. Mix gently with a wooden spoon.

    SERVES 4-12

    Costa Rica food is the result of a medley of various types of spices, sauces, oils and other ingredients used in different cuisines from the various corners of the world. In the recipes of Costa Rica you will find the traces of the traditional cuisines of countries like Spain, France, China, Italy and Africa.

    Spices like annatto, oregano, nutmeg, pepper, coriander, saffron, thyme, sauces like Worcestershire, soy, and Lizano, oils like vegetable oil and olive oil and ingredients like corn, sweet potatoes, cassava, beans, are all used in Costa Rica food. Rice is a very important part of Costa Rican diet and so are beans.

    Apart from a huge variety of veggies, Costa Rica definatelly has good meats. Excellent beef from the local cows, abudance of really good local chicken and of cource fresh, high quality seafood.

    Let's see what the Costa Ricans are eating, bite by bite.

    Appetizers are known as bocas in the land of Costa Rica. These are served usually with drinks. These are often distributed free of cost. Even if they are priced it is kept at a bare minimum.

    There are some very popular varieties of bocas available. Some of them are:

    Tamales- these are cornmeal patties with a stuffing and it is wrapped and then steamed inside banana leaves.


    Gallos - tortillas are very common in Costa Rica. Gallos are the tortillas heaped with meat, chicken, beans and lots of cheese.

    Ceviche- this is a salad that acts as an appetizer. It is made from marinated seafood.


    Patacones- these are fried green plantains that come in the form of chips.



    Fried yucca- very popular, close to our french fries.


    Tacos- filled in with lots of ingredients, chicken, guacamole and sauces.

    Empanadas- breaded goods and pies.

    The salads are as interesting as the appetizers. The common varieties of Costa Rican salads are made from tomato bits, onion rings, shredded cabbage, diced red or green peppers, a little cilantro with the seasoning done with lime juice and a little sprinkling of salt.

    The Main Dishes are not only tasty and filling but also healthy. The spices are additives enrich the food yet keep it healthy.Some of the popular main dishes are:

    Gallo Pinto- made from beans mixed with rice flavored with coriander, onions and some Worcestershire sauce.

    Casados- is another dish that is a part of the daily diet of the Costa Ricans. This is a main course meal prepared from beans, rice, pork or chicken with some lettuce, cabbage, tomato salad and some dried plantains.

    Frito- is a stew made from pork

    Mondongo- a beef stomach soup

    Barbudos- an omelet made from string beans

    Soups are also an integral part in the Costa Rican diet. The most commonly prepared soups of Costa Rica are the Bacalao that is the cod soup, the Bean Soup, the Mondongo or the beef stomach soup, the Olla de Carne that is the Costa Rican beef soup, the Sopa de Albondigas or the soup that is made of meat balls, the Sopas de Leche or the Tortilla soup and the Sopa de Pescado that is the fish soup.

    Besides the main dishes and soups there are also a number of sweet dishes and candies that are fascinating.Here are some of the wonderful desserts of Costa Rica:

    The Cono Capuchino is an ice-cream cone with chocolate topping, flan is cold caramel custard, dulce de leche is a syrup made from boiled milk and sugar.

    The thicker variety is known as the Cajeta and this is fudgelike and absolutely delicious.

    Then there are the Mazamorra, which is a corn starch pudding, milanes are chocolate candies.

    The Pan de Maiz is a type of sweet bread made from corn and the queque seco is a pound cake.

    The Melcocha is a candy that is made from raw sugar and there is also the torta chilena, which is a multilayered cake full of dulce de leche.

    Costa Rica drinks do more than just quenching ones thirst.

    The most favorite costa rican drink is of course Coffee. High quality, nativelly cultivated and strong, on asking for milk coffee or 'cafe con leche' you will be offered coffee that is a strong blend of coffee and milk mixed in equal proportions. When you wish to have black coffee you need to ask for 'cafe sin leche'.

    A very popular traditional drink of Costa Rica is Agua Dulce. This drink is made from sugarcane that is not strained or bleached.

    The native fruits like mango, tamarindo, papaya, etc., are used to make fresh Fruit Juices. You can have these juices with milk or water.

    Costa Rica makes good quality Gin and Vodka, moderate quality Rum and poor quality Whiskey. The mixture of coke and rum goes down very well with the locals in Costa Rica.

    You can also try the native costa rican Beer, very popular among the natives, Imperial.


    Home style cooking dominates the scene in Costa Rica with most people preferring simple dishes. However, the meals are wholesome, nutritious and priced reasonably, especially beef and seafood. People of Costa Rica love eating and so will you, if you try their wonderful, exotic cuisine.

    Hawaiian Laulau Recipe for Tiki party or Luau. Polynesian Food Recipe.

    Hawaiian Laulau or Luau Ground Cooking. 

    Great Idea for a Tiki party or Luau. A Classic Polynesian Food for a tiki party.



    OVERVIEW
    TRADITIONAL
    Hawaiian Laulau traditionally is pork or fish wrapped
    first with taro leaf, then with ti leafs and cooked. 
    The taro leaf is also called luau from which the 
    traditional Hawaiian festival gets it's name.

    Cooking of the Laulau is usually done in a
    underground oven. The tradition underground oven
    is called a imu. Hot rocks are placed on the Laulau
    and then covered with banana leafs, and then more
    earth. It just takes 2-3 hours for the food to be ready.

    Normally served with sides of rice and macaroni.

    Tiki food Recipes: Tiki Lime Chicken Recipe. A island classic.




    TIKI FOOD RECIPES: How to make a great Tiki Lime Chicken Recipe.
    A classic island recipe, perfect for a tiki party or as a luau party food.

    We served this last night at a tiki party for a small group of friends. It has a great exotic taste due to the spices used and the lime really brings out the flavor in the chicken and gives it that tropical taste.

    Tiki Lime Chicken Recipe:
    Ingredients

    5 lbs chicken breast or thighs
    4 Tsp. coriander
    4 Tsp. ground chili
    4 Tsp. pasilla ground chili
    4 Tsp. garlic salt
    4 Tsp. oregano
    2 fresh limes

    METHOD

    1. Wash chicken with cold water, then lime juice.

    2. Place in brown and bag or shake and bake.

    3. Spread spices over chicken.

    4. Pour or squeeze juice of limes over the chicken.

    5. Place in oven at 350 for 1 hr. 15 mins.


    SERVE WITH
    I would go with a dirty rice or jasmine rice
    and chopped fruit.

    WINE
    Rhine, Mascato, White and semi Sweet.

    TROPICAL SHAKE RECIPE

    • 1 Banana

    • 1 peeled Mango

    • 1 peeled Papaya

    • 1 1/2 cup milk

    • 2 tsp Sugar

    • 1 cup ice


    Mix all ingredients in a blender until thick.

    Haupia is a pudding made from coconut.
    Kaulolo is a pudding mad from the taro plant.
    Laulau are meat and fish wrapped in tea leaves.
    Liliko'i is the passion fruit. The juice is often used in sauces and desserts.
    Lomi Lomi is a salad of tomatoes, onions, chili peppers and salted fish, usually salmon.
    Papaya is a very common island fruit.
    Pineapple another very common available island fruit.
    Poi a very popular hawaiian staple consists of taro roots cooked and mashed into a paste.
    Poke is chopped raw fish sprinkled with Hawaiian salt, ground kukui nuts and limu (seaweed).
