Tiki Foods: The grilled "Tiki Island Style Skewers" recipe using spices, shrimp, chicken and vegtables

Tiki Food: How to make the Tiki Island Style Skewers.

A tropical island classic kabob recipe or satay recipe. This is another great recipe that's fun to eat at a tiki party or as a luau party food. Plus the skewers are super fun to make, at least we think so.

This recipe takes about 25 minutes to make and serves 4-6 people.


 Island Style Skewers Ingredients


  • 1/2 cup Olive Oil
  • 1/2 cup Mango Chutney
  • 1/2 cup Teriyaki Sauce
  • 2 tlsp Balsamic Vinegar
  • 1 pound Boneless Skinless Chicken Breast
  • 18 med Shrimp
  • 18 large Bamboo Skewers (Soak in water for one hour before using)
  • 1 Yellow Onion cut into cubes
  • 1 Red Onion cut into cubes
  • 2 Mango's cut into cubes
  • 1 Green Pepper cut into cubes
  • Ginger Mango Sauce for dipping


Cooking Procedure

For Marinade
Combine the oil, chutney, vinger and teriyaki sauce.
Set aside half for basting on the grill.

Prep Procedure
Cut the chicken into cubes.
Place the chicken and shrimp into a large pan or bowl, and pour 1/2 the marinade over them all.
Place in the frig for 3 hours, overnight is better.
Place skewers into water to soak for at least an hour.

Procedure:
Peel and cut the onions and peppers into large 1-2 inch wedges.

Place ingredients onto the kabobs as follows:
chicken, onion, mango, green pepper, shrimp

Spray a bit of cooking oil onto grill surface before lighting.

Place the tiki skewers over med hot coals for 15 minutes.

Brush kabobs with left over marinade, turn and cook until done.

Serve with the Ginger Mango dipping sauce.

Tiki Foods and Luau Party Food: Luau Ham and Pineapple Skewer Kebobs Recipe

Tiki and Luau party foods: How to make Luau Ham and Pineapple Kabobs.

This are great tasting, fun to eat and they go great with a luau or tiki party.
Popular in the Hawaiian Islands

Makes: 36 Skewers


Luau Ham and Pineapple Skewers Recipe:

  • 1 can of pineapple chunks
  • 1/4 cup orange marmalade
  • 6 oz. thinly sliced cooked or smoked ham
  • Wooden or Bamboo Skewers (Soak in water for 30 minutes)
  • 1 jar of maraschino cherries


Procedure:
In a mixing bowl, coat the pineapple chunks in the orange marmalade.
Put a cherry onto the skewer.
Put a pineapple slice onto the skewer.
Wrap a ham string around each pineapple chunk and secure with a toothpick.

Tiki & Luau Recipes: Seafood Pineapple Bowl a great tropical soup recipe.

Tiki Foods: How to make a seafood pineapple bowl soup.
Great tropical flavor and great in presentation. This one has a great tiki or tropical look to it. It almost looks like a tiki mug in appearance. This is a great tiki food to serve at a tiki party or luau. This one you make on the grill. This one comes from the expert Sandra Lee.

Seafood Pineapple Bowl 

Ingredients:
• 8 oz rock shrimp
• 8 oz scallops
• 1 pound cod, cut in 1-inch pieces
• 3 large fresh pineapples
• 1 can coconut milk
• 1/2 cup chopped fresh cilantro
• 2 teaspoons Thai seasoning

Procedure:
Skewer the shrimp, scallops, and cod on separate skewers and grill them until they are just cooked through. You can tell they are done when they come off the grill very easy without sticking. Cut the pineapples in half and scoop the middle from each pineapple to form a bowl. Wrap the bottom of the pineapple bowl with a double layer of heavy-duty foil because it's going onto the grill. they will get nice and soft. Cut the reserved pineapple into small cubes.  In a bowl, combine pineapple, coconut milk, cilantro, and Thai seasoning. Fill pineapple bowl halfway full of the mixture. Mix meat together at end and serve. Garnish this tropical seafood soup with a shrimp kabob.

Grilling a melon or other fruit, gives the fruit a whole new personality. Grilling fruit is very simple, put you must follow a few simple steps.  The most important thing is to get the grill very hot. Getting the grill really hot makes them cook fast. You want the outside to be hot, but the insides just warm. Grill on hot for a few minutes on each side.
