Tiki Foods: The grilled "Tiki Island Style Skewers" recipe using spices, shrimp, chicken and vegtables

Tiki Food: How to make the Tiki Island Style Skewers.

A tropical island classic kabob recipe or satay recipe. This is another great recipe that's fun to eat at a tiki party or as a luau party food. Plus the skewers are super fun to make, at least we think so.

This recipe takes about 25 minutes to make and serves 4-6 people.


 Island Style Skewers Ingredients


  • 1/2 cup Olive Oil
  • 1/2 cup Mango Chutney
  • 1/2 cup Teriyaki Sauce
  • 2 tlsp Balsamic Vinegar
  • 1 pound Boneless Skinless Chicken Breast
  • 18 med Shrimp
  • 18 large Bamboo Skewers (Soak in water for one hour before using)
  • 1 Yellow Onion cut into cubes
  • 1 Red Onion cut into cubes
  • 2 Mango's cut into cubes
  • 1 Green Pepper cut into cubes
  • Ginger Mango Sauce for dipping


Cooking Procedure

For Marinade
Combine the oil, chutney, vinger and teriyaki sauce.
Set aside half for basting on the grill.

Prep Procedure
Cut the chicken into cubes.
Place the chicken and shrimp into a large pan or bowl, and pour 1/2 the marinade over them all.
Place in the frig for 3 hours, overnight is better.
Place skewers into water to soak for at least an hour.

Procedure:
Peel and cut the onions and peppers into large 1-2 inch wedges.

Place ingredients onto the kabobs as follows:
chicken, onion, mango, green pepper, shrimp

Spray a bit of cooking oil onto grill surface before lighting.

Place the tiki skewers over med hot coals for 15 minutes.

Brush kabobs with left over marinade, turn and cook until done.

Serve with the Ginger Mango dipping sauce.
