TIKI FOODS: Tiki Spring Rolls Recipe. tiki appetizers.

Tiki Foods: How to make a classic spring roll recipe for a tiki party, luau or pupu platter.

Spring rolls are different in each part of Asia.
Spring rolls also differ from the classic egg roll.
They can eaten be fresh or fried.
A perfect treat for a tiki party or tropical luau.




Spring Roll Recipe 



Ingredients:

  • 3 cloves of minced garlic.
  • 1 inch of grated ginger root.
  • 2 green or white onions, sliced into small strips
  • 1 red chili finely chopped.
  • 1/2 cup shredded cabbage.
  • 5  mushrooms, cut into strips.
  • 1/2 cup sliced tofu or you can use baby shrimp.
  • 2 cups fresh bean sprouts.
  • 1/2 cup fresh coriander.
  • 1/2 cup fresh basil.
  • 2 Tbsp. oil.
  • 1 package of spring roll wrappers.

  • STIR-FRY SAUCE:
  • 2 Tbsp. of soy sauce.
  • 2 Tbsp. of fish sauce.
  • 2 Tbsp. fresh lime juice.
  • 1/4 tsp. white granulated sugar.
  • TO SERVE:
  • Thai sweet chilli sauce
  • YOU CAN MAKE YOUR OWN DIPPING SAUCE:
  • Mix 1/3 cup of plum sauce with 3 Tbsp. of soy sauce. Then add cut fresh chili or you can try cayenne pepper.

Preparation:

  1. Place oil in a wok over medium to high heat. Add garlic, ginger, shallots, and chilli. Stir-fry about 1 minute. 
  2. Then add the cabbage, mushrooms, and tofu or shrimp if you prefer. As you stir-fry, you can add the sauce. Stir-fry 1-2 minutes.
  3. Remove from heat and then add the bean sprouts.
  4. Add salt, adding 1 Tbsp. more fish or soy sauce if needed.
  5. To make the rolls, place a spring roll wrapper on a clean surface. Place one large Tbsp. of the filling on the side of the wrapper.
  6. Now sprinkle some of the fresh coriander and basil.
  7. Fold the left and right sides of wrapper, then lift up the wide end nearest you and tuck overtop. Roll to the other end. Secure the roll by wetting the end, "pasting" it closed.
  8. To fry the spring rolls, place some oil in a wok with medium-high heat. When bubbles start to rise.
  9. Using tongs, place spring rolls in the oil, allowing them to fry about 1 minute on each side. Spring rolls are done when they turn light to medium golden-brown. Place them on paper towels to drain while you finish frying the rest.
  10. Serve spring rolls with Thai Sweet Chili Sauce, or your own dipping sauce.

SKEWERED BEEF TERIYAKI APPETIZER For Tiki Party, Luau or Pu Pu Platter


Island and Tiki foods: How to make a SKEWERED BEEF TERIYAKI APPETIZER.

This is a great chinese recipe for a Tiki Party, Luau or Pu Pu Platter.
This serves 8 people.
SKEWERED BEEF TERIYAKI RECIPE
Ingredients
2 lbs silced beef
1 1/2 c. soy sauce
1 tsp. rice vinager
1/4 cup brown sugar
1 tsp ginger
2 garlic cloves
1/2 tsp ground black pepper
1/4 cup oil
1 tsp cornstarch
1 tsp lemon juice

METHOD or PREPARATION 
Combine all of the ingredients but beef to make the sauce.
Slice meat in pieces or longer for skewered.
Marinate in sauce 2-4 hours. 
Cook on grill about 12-15 minutes, turning often.

Like tiki drinks, this platter has style and personality, flaming
and a assortment of exotic tastes.

A perfect appetizer for a luau or tiki party, made up of meat and seafood.

May include all kinds of yummy finger foods, like chicken fingers, wings, teriyaki beef, wantons, beef satay, carb rangon, shrimp, rips, egg rolls.

This is usually served "flaming" with a small hibachi grill in the center. This is called, the "flaming pu pu platter." small hibachi grill.


"PU PU" is a Hawaiian word that translates as Appetizer.
There are two types of Pu Pu, "light pu pus" and "heavy pu pus."
As the name implies light pu pus are lighter in far and are usually of the cold types of finger foods. The heavy is made up of warmer and heavier foods.

It started in America during the craze for "Polynesian-style" culture of the 1940s and 1950's It spread to America from Hawaii, by the great tiki legends Don the Beachcomber and Trader Vic.
